Description:
Grown on a small, east-facing parcel of deep clay-limestone soil in Les Sorbins, on the Pommard side of the commune towards Bligny-lès-Beaune, from vines planted in 1979. The fruit is hand-harvested and fermented with indigenous yeasts, undergoing a cold pre-fermentation maceration before a warmer, extended alcoholic fermentation with daily punch-downs and pump-overs, then aged twelve months in French oak, a quarter of it new.
True to its appellation, this is a generous, gourmand Pinot Noir with real volume in the mouth. Its Pommard-adjacent site lends a touch of youthful structure, so it's a wine that can be enjoyed on release but also rewards a few years in the cellar, evolving toward softer notes of faded rose, tobacco and preserved fruit. Best given a good swirl in the glass before tasting, and served at 16–17°C.
