A deep golden amber in the glass, this luxurious ice cider is made by pressing ripe Quebec apples and leaving the juice to freeze naturally through the region's harsh winter, concentrating its sugars and aromas before a slow, cool fermentation.
On the nose, baked apple and caramelised pear mingle with apricot, honey and a lift of citrus peel. The palate is lush and unctuous, coating yet buoyed by bright, precise acidity, with orchard fruit, dried apricot and a honeyed sweetness carrying through to a long, clean, refreshing finish. Rich without being heavy, it's a wine of real balance and elegance.
Perfect with blue cheese, foie gras or dark chocolate, or lengthened with elderflower and soda for a lighter, long drink.
